This is a bit of a misnomer, since many or most of the beans we grow are not, in fact, green. This year, we're growing a ton of purple pole beans called Blue Coco Pole Bean (they seem to really want this to be blue, but it's totally purple). This has been a nice surprise; having only grown bush beans in the past, we didn't realize how ergonomic it would be to pick these plentiful beans! We're also growing Maxibel Haricot Vert (green), Royal Burgundy (purple), and Rocdor (yellow).
HOW TO STORE: Beans should stay good for at least a week in a plastic bag in the fridge crisper drawer. You can also freeze them for longer term storage by simply cutting them to your desired length and throwing them in a freezer bag.
HOW TO USE: One of Eleanor's favorite recipes for a green bean side dish is to pair them with cherry tomatoes and basil (though we just pan fry the beans lightly instead of steaming or boiling them). You can
